- No to GMOs: Organic farming prohibits the use of genetically modified organisms, promoting the conservation of biodiversity and the prevention of genetic contamination.

- Traceability: Organic foods are often subject to strict controls and are tracked from field to table to ensure their authenticity.
Protected Designation of Origin (PDO)
PDO is a certification system that protects and promotes traditional and high-quality food products from specific geographical regions. Some key principles of the PDO include:
- Geographical Origin: PDO products must be grown, produced and processed in a specific geographical region, which helps to preserve local culinary traditions.
- Traditional methods: PDO often requires the use of traditional production methods, which can be passed down from generation to generation.
- Quality control: PDO products undergo rigorous quality control and must meet certain standards to obtain certification.
- Enhancement of local culture: The PDO helps to preserve the culinary traditions and cultural identity of the producing regions.
